Cookies with Homemade Mandarin Marmalade
The holiday baking season is here, and these cookies can also be a perfect gift. You can prepare them for visits or just to delight your family. Included is also a recipe for homemade mandarin marmalade, which will add an extra charm to the cookies.

Ingredients

250 g Butter, unsalted

100 g Sugar, white

2 piece Egg, egg yolk, fresh

1 spoon Tangerine

1 pinch Salt, table

300 g Flour, Wheat, bread flour

Marmalade

500 g Tangerine

Steps

Add butter, regular and vanilla sugar to the bowl of a mixer and mix for at least 15 minutes to create a light and thick mixture. Add the egg yolk, salt, and grated mandarin zest. Mix until the ingredients are combined.

Slowly add flour to the mixture to form a soft and smooth dough that doesn't stick. Shape the dough into walnut-sized balls and place them on a baking sheet lined with parchment paper. Leave at least 5 centimeters of space between them. Make a hole in the center using the handle of a wooden spoon, as shown in the image below.

Flatten the balls slightly and enlarge the holes if desired (use the handle of a wooden spoon or your thumbs). This will allow them to spread just enough during baking to be filled with marmalade.

Bake the cookies at 180 degrees Celsius for 12 to 15 minutes. Once baked, let them cool completely. Sprinkle the cooled cookies with powdered sugar and fill them with marmalade.

To make the marmalade, peel the mandarins and remove as much of the white pith as possible. Cut them into pieces, place them in a heavy-bottomed pot, and add vanilla and regular sugar. Cook for about 10 minutes and then remove from heat.

Transfer the cooked mandarins to a blender and blend on high speed until smooth. Return to the pot and cook until the desired thickness is achieved. Remove the prepared marmalade from heat and let it cool.

While the marmalade is still warm, use a spoon to fill the cookies. You can also use a piping bag. Arrange the prepared cookies on a beautiful plate or tray and serve.

Advice
Instead of mandarins, you can use oranges. Make sure to use zest that has not been treated with pesticides. If you dont have it, you can use store-bought dried zest. Butter can be replaced with margarine if desired. The marmalade can be made in advance and frozen in portions. Thawed, it tastes the same as freshly made. Add any spices you like (cinnamon, ginger, allspice, cloves…).
