Cookies with Macadamia and Cranberries
White chocolate, macadamia nuts, and cranberries complement each other beautifully. The cookies are very quick to prepare, but youll need to wait just long enough for them to (at least) cool slightly.

500 g chocolate, dark

200 g Butter, unsalted

150 g Sugar, white

2 piece Egg, fresh

350 g Wheat flour, white, multi-purpose

1.5 teaspoons Baking powder

Steps

Preheat the oven to 180 degrees Celsius. Chop the chocolate into small pieces. Melt 170 g of the chocolate pieces over steam (or in the microwave). Coarsely chop the nuts with a knife.

In a bowl with an electric mixer, cream the softened butter and sugar until smooth. While continuously mixing, gradually add the eggs one by one and mix until a smooth and creamy mixture forms. Stir in the melted white chocolate.

Sift the flour and baking powder into the bowl and mix well. Add the dry ingredient mixture to the bowl with the egg-butter mixture and mix thoroughly to form a uniform dough. Finally, fold in the chopped nuts, cranberries, and the remaining chocolate pieces with a spatula or spoon.

Line a low baking tray with parchment paper. Using a spoon, place dollops of dough onto the prepared tray, ensuring there is enough space between them as the cookies will spread slightly during baking. Bake the cookies in the preheated oven for 12 minutes.

Let the baked cookies cool on the tray for 1 to 2 minutes, then transfer them to a wire rack to cool completely. Serve with a cold or warm beverage.

Advice
The butter is easiest to soften by taking it out of the refrigerator at least one hour before preparation and letting it sit at room temperature.
