Corn Fritters
Its best to prepare the fritters during the fresh corn season. The size of the fritters is entirely up to you: for lunch, you can make larger fritters, while for a party, smaller fritters can be served with a dip.

Steps

Clean the young onions, wash them, and finely chop them. Rinse the corn cobs under running water and remove any possible silk. Place the corn cob with the tip facing down and start cutting the kernels off with a large knife. Then slowly cut the kernels off the cob. Repeat this until both corn cobs are fully stripped. Finally, you can use a spoon to remove any remaining kernels from the cob.

Heat olive oil in a large pan, add the corn kernels and onion. Fry while stirring until the onion is completely softened. Remove the pan from the heat and let the contents cool completely.

Crack the eggs into a large bowl and lightly beat them with a hand whisk. Then add the sifted flour, baking soda, corn, onion, and salt to the bowl. Mix everything well. With slightly moistened hands, shape the mixture into fritters of any size.

Place a large deep pan on the stove and heat it well, then heat the oil in it. Carefully place the prepared fritters into the hot oil. Fry the fritters on each side for about 3 minutes or until they turn golden brown. Remove the fried fritters with a slotted spoon and place them on a plate lined with kitchen towels to drain excess oil.

Serve the fritters on plates and offer them with a chosen side dish.

Advice
Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The fat is hot enough when small bubbles form around a wooden spoon handle.
