Corn Muffins
This recipe makes 12 corn muffins. The muffins made with this recipe contain less fat than regular muffins and are therefore considered a healthy dessert. Preparation is quick and easy - they will be ready in half an hour.

Ingredients

1 cup Koruzna moka, whole grain, yellow

1.5 cups Flour, Wheat, bread flour

0.5 cups Sugar, brown

1 teaspoon Baking powder

1 pinch Salt, table

0.5 cups Corn, yellow, in brine

1 piece Egg, fresh

3 spoons Butter, unsalted

Preheat the oven to 175 °C. Drain the corn from the can and rinse it under water. Blend half a cup of corn with a stick (or kitchen) blender into a smooth mixture.

In a bowl, mix together the corn (whole and blended), egg, and butter. In another bowl, mix all the remaining ingredients.

Add the dry ingredients to the corn mixture and stir until a uniform dough is formed. Grease the muffin tin or line it with paper liners. Spoon the batter into the muffin cups, filling them no more than 2/3 full, as the batter will rise during baking. Bake in the preheated oven for 20 minutes. Let cool, remove the muffins from the tin, arrange them on a serving plate, and serve.
