Corned Beef Hash

Ingredients

340 g Meat, beef, dried beef

675 g Potatoes, white

1 piece Onion, raw

2 spoons Oil, olive

0.5 teaspoons Salt, table

Steps

Peel the potatoes, wash them, and cut them into small cubes. Take the corned beef out of the can and cut it into cubes the same size as the potatoes. Peel the onion, wash it, and also cut it into small cubes.

Place a pot with lightly salted water and the potato cubes on the stove. Bring to a boil and cook the potatoes at a gentle simmer for 5 minutes. Then drain the potatoes well.

In a larger pan, sauté the onion in heated oil for about 2 minutes. Then add the cooked potatoes and mix everything well. With a spatula, press the potatoes lightly against the bottom of the pan and spread them evenly. Leave them undisturbed for 4 minutes to allow the bottom side to brown slightly. Then flip the potatoes and brown the other side.

Add the corned beef cubes, salt, and pepper to the pan and mix everything well. Cook on moderate heat, stirring occasionally, for another 3 minutes. Then remove the pan from the heat and transfer the contents to a serving dish.

In a fresh pan, heat oil and crack the eggs into it, season with salt and pepper. When the egg whites are no longer transparent, add 2 tablespoons of water and cover the pan. Cook the eggs on moderate heat for another minute until the yolks become cloudy. Uncover the pan and carefully place the eggs on top of the mixture in the serving dish. Serve immediately.
