Cottage Cheese and Semolina Cake with Apples
A great dessert for all who love cottage cheese and apples. You don’t need advanced baking skills to prepare it, as the dessert doesn’t require a sponge cake or a delicate dough. It’s perfect with a cup of any warm drink.

Ingredients

500 g Cheese, cottage cheese

150 g Sour cream

120 g Semolina

120 g Sugar, white

1 bag Sugar, white

1 teaspoon Baking powder

4 pieces Egg, fresh

50 g Raisins

0.5 piece Lemon, fresh, without shell

1.5 teaspoons Spices, cinnamon, ground

Steps

Sort the raisins, rinse them, and place them in a bowl. Pour hot water over them and let them soak while you prepare the other ingredients.

Wash and peel the apples. Cut them into quarters and remove the stems and cores. Slice the quarters into thin pieces, place them in a bowl, and season with lemon juice, sugar, and ground cinnamon. Gently mix and set aside.

In one bowl, mix the dry ingredients: baking powder, regular and vanilla sugar, and wheat semolina. In another bowl, mix the cottage cheese and sour cream. You can also press the cottage cheese through a fine sieve if you want a smoother mixture, but this is not necessary.

First, mix the egg yolks and lemon zest into the cottage cheese mixture, then add the dry ingredients. If the mixture seems too wet, add a little more semolina.

Add a pinch of salt to the egg whites and beat them into stiff peaks. Mix the soaked raisins into the cottage cheese mixture, then gently and slowly fold in the beaten egg whites in two or three parts.

Grease a cake pan (26 cm in diameter) well with butter, then pour in the prepared cottage cheese mixture and spread it evenly with a spatula. Arrange the apple slices nicely on top.

Bake the cake in a preheated oven at 180°C for 40-50 minutes. It’s done when the apples soften and turn golden brown. For the last 15 minutes, you can increase the temperature to 200°C.

Advice
Instead of hot water, you can use rum or orange juice to soak the raisins.
