Cottage Cheese Cake (Flourless)
Cottage cheese cake is very light, so it melts in your mouth. The preparation itself is very quick, but baking in the oven will take some time. If youre very impatient, you can serve the dessert while its still warm. For the finishing touch, add fresh fruit and a dollop of whipped cream, and a cup of coffee pairs perfectly with this dessert.

In a bowl, add cottage cheese, Greek yogurt or sour cream, lemon juice, grated lemon zest, sugar, vanilla extract, cornstarch, and salt. Mix the ingredients well with an electric mixer set to low speed. You can also use a blender to achieve a smooth mixture without lumps.

Gradually, one by one, mix the eggs into the cottage cheese mixture using a hand whisk.

Grease a round or oval cake pan well with butter. Pour the cottage cheese mixture into the pan, spreading it evenly over the entire surface and smoothing the top. Bake the cake for about 45 minutes in an oven preheated to 180 degrees Celsius. The cake is done when it turns golden brown on top and around the edges and pulls away from the sides of the pan. The center will still be moist and 'wobbly,' but it will firm up slightly as it cools.

The cake can be served while still warm or allowed to cool completely before serving. In this case, let it cool at room temperature for about 1 hour, then cover it with plastic wrap and refrigerate for 2-3 hours.

Before serving, dust the warm or cooled cake with powdered sugar and decorate with fresh fruit. Optionally, add a dollop of whipped cream on the side.
