Steps

Prepare the shortcrust pastry from the ingredients for the dough. Wrap it in foil and let it rest in the refrigerator for 60 minutes.

Preheat the oven to 180 °C. Grease a tart pan with butter. Sprinkle the bottom and sides with almonds. Roll out the dough on a floured work surface and line the bottom and sides of the pan with it. Prick the dough evenly with a fork.

Wash the lemon and grate the zest of half the lemon. For the filling, mix the cottage cheese, sugar, cornstarch, eggs, and grated lemon zest in a bowl. Whip the cream with an electric mixer until stiff, then add it to the cottage cheese mixture and mix well but gently to form a uniform mixture. Spread the mixture over the dough and smooth the top.

Cut the lemon and squeeze out the juice. Wash the apples, peel them, remove the cores, and slice them thinly. Arrange the apple slices on top of the cake as desired. Sprinkle the apples with cinnamon. Heat the honey in a pan until it caramelizes. Mix it with the lemon juice and drizzle it over the cake. Bake the cake in the preheated oven for 60 minutes. Let the baked cake cool, slice it, and serve.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
