Cottage Cheese Cake with Raisins
Posolanka or cottage cheese cake is one of the most characteristic dishes of the Prekmurje region. It is usually prepared during the harvest or larger field works, and it is also very popular as a dessert after lunch. It is best when served warm, cut into triangles.

Ingredients
Dough

500 g Wheat flour, white, multi-purpose

Steps

Sift the flour into a bowl and make a large well in the center. Pour lukewarm milk into the well. Sprinkle salt around the edges of the flour, and crumble the yeast into the well, adding a teaspoon of sugar to help it rise. Let it sit for 10 minutes to allow the yeast to activate.

Meanwhile, slowly melt the butter in a small pot over low heat, let it cool, then pour it into the bowl with the other ingredients. Knead into a smooth and soft dough, shape it into a ball, and let it rise in a warm place for about 60 minutes or until it doubles in size.

Sort through the raisins, place them in a small bowl, and pour rum over them. Let them soak while the dough is rising.

Gently knead the risen dough, then roll it out or stretch it by hand to about a finger's thickness. It should be slightly larger than the baking dish, as the edges will be folded over the filling. Place the rolled or stretched dough onto a greased baking dish and let it rise for 15 minutes.

Meanwhile, prepare the filling. In a bowl, mix the cottage cheese, eggs, sugar, and breadcrumbs. Pour the mixture onto the risen dough and spread it evenly, leaving about 2 cm of the edge uncovered. Sprinkle the soaked raisins over the filling, then fold the excess dough over the edges.

Make a glaze by mixing an egg and sour cream, optionally adding a bit of sugar. Brush the edges of the cake generously with the glaze and spread the rest over the filling. Bake in a preheated oven at 180°C for about 45 minutes. The cake is done when the filling turns a nice light brown color.

Serve the cake while still warm. Before serving, sprinkle powdered sugar on top and cut it into pieces.
