Cottage Cheese Christmas Roll
Christmas desserts usually contain a lot of spices, candied fruits, and nuts. All these ingredients are also included in the classic Christmas roll, which is enriched with one important ingredient for juiciness and freshness - cottage cheese.

180 g Butter, unsalted

Steps

Place a small pot on the stove and slowly melt the butter over low heat. Remove the pot with the melted butter and let it cool slightly.

Preheat the oven to 180 degrees Celsius. Sift the flour and baking powder into a large bowl and mix well. Add sugar, vanilla sugar, salt, spices, orange zest, eggs, ground almonds, melted butter, and cottage cheese. Attach the dough hook to the electric mixer and process the ingredients in the bowl thoroughly (first on low speed, then on the highest speed).

Once the ingredients come together into a ball, transfer the dough to a floured work surface. Roll out the dough, sprinkle with soaked raisins, candied lemon peel, and candied orange peel, and knead into a smooth dough.

Roll out the dough on a floured work surface to a thickness of 4 cm and shape it into an oval roll with floured hands. Flatten the middle slightly with a rolling pin, then fold the left side of the dough over to the right, so that the bottom part extends slightly outward. Shape the middle part with your hands to create the characteristic shape of a Christmas roll.

Carefully transfer the prepared roll to a low baking dish lined with parchment paper. Bake the roll in the preheated oven for 50 to 60 minutes.

Shortly before the end of baking, place a pot on the stove and melt the butter. Place the baking dish with the baked roll on a wire rack and brush the still hot roll with half of the butter and sprinkle with half of the powdered sugar. Once the roll has cooled slightly, repeat the process.

Once the roll has completely cooled, serve it on a beautiful plate or platter, slice it, and serve.
