Cottage Cheese Dumplings with Fruit Sauce
When fresh fruit is not in season, and we dont feel like stuffing dumplings with jam, these light and quickly prepared cottage cheese dumplings with semolina are an excellent solution. Topped with a delicious blueberry sauce, they become a great lunch that we can also enjoy for dinner.

Ingredients
Blueberry sauce

250 g Blueberry, raw

2 spoons Sugar, white

1 teaspoon Koruzni škrob

0.5 teaspoons Lemon zest, fresh

pieces Juice, lemon

60 ml Water

350 g Cheese, cottage cheese

1 piece Egg, fresh

2 spoons Sugar, white

1 pinch Salt, table

2 spoons Semolina

pieces Flour, Wheat, bread flour

Steps

If necessary, drain the cottage cheese, then place it in a bowl and mix with the egg, sugar, and salt.

Add flour and semolina to the ingredients in the bowl. Mix well with a spoon to form a uniform dough, which will still be somewhat soft and sticky. If it seems too soft, you can add a bit more flour or semolina. Set the bowl aside and let the dough rest for 15 minutes. During this time, the semolina will absorb moisture and thicken the mixture.

Meanwhile, prepare the blueberry sauce. In a small pot, mix blueberries, sugar, cornstarch, lemon zest, lemon juice, and water. Place it on the stove and heat over medium heat until the liquid boils, then reduce the temperature slightly and simmer the sauce for another minute or two. If desired, blend the prepared sauce with an immersion blender.

Bring a large pot of lightly salted water to a boil for cooking the dumplings. Shape medium-sized dumplings from the prepared dough using wet hands. Once the water boils, add the dumplings to the pot and cook them for 2 minutes after they float to the surface.

Remove the cooked dumplings from the pot with a slotted spoon. Serve them on plates, pour the sauce over them, and optionally dust with powdered sugar. Serve the prepared dish.
