Cottage Cheese Dumplings with Roasted Nuts and Cream Sauce
Its a fact that we Slovenians love dumplings. Here is a recipe for delicious savory dumplings with parsley filling, served not with toasted breadcrumbs but with roasted nuts. The cream sauce served with the dumplings adds the perfect finishing touch.

250 g Flour, Wheat, bread flour

140 ml Water

1 piece Egg, fresh

20 g Oil, vegetable oil, canola

Steps

Mix soft flour, egg, lukewarm water, salt, oil, and lemon juice to form a dough, then let it rest for about an hour.

While the dough is resting, prepare the filling for the dumplings. Beat butter, softened to room temperature, until creamy, then add egg yolks, pressed cottage cheese, sour cream, and finally stiffly beaten egg whites. Gently mix everything together, season with salt, and add coarsely chopped fresh parsley.

Roll out the rested dough as thinly as possible, spread the filling over it, and roll it into a dumpling. Wrap the dumpling in a cloth and cook in salted water for about 30 minutes.

Roast the nuts in a pan without fat, add salt and butter, and use this mixture to garnish the cooked dumplings.

Prepare the cream sauce in a small pot. Cook sweet cream over low heat until it reduces by half—meaning until enough water evaporates so that only half the cream remains in the pot. Once the cream has cooled slightly, add sour cream and mix well to create a thick cream sauce, which is served alongside the dumplings.
