Cottage Cheese Gnocchi with Asparagus
Quickly prepared cottage cheese gnocchi, also known as lazy gnocchi, paired with asparagus, young onions, and pancetta. A spring recipe that is definitely worth trying.

Ingredients
Gnocchi

450 g Cheese, cottage cheese

1 piece Egg, fresh

1 teaspoon Salt, table

225 g Flour, Wheat, bread flour

1 spoon Oil, olive

100 g Meat, pork, smoked bacon

2 piece Onion, young

2 pod Garlic, fresh

500 g Asparagus, fresh

2 dl Sweet cream
-
50 g Cheese, Parmesan, hard

1 piece Lemon, fresh, without shell
Steps

First, prepare the cottage cheese gnocchi.

Cut the pancetta into strips, halve the onion and slice it thinly, mince the garlic, and cut the asparagus into approximately 3 cm long pieces. Grate the Parmesan and zest the lemon.

Heat oil in a large pan and fry the pancetta for two minutes. Add the onion and garlic. Stir-fry until the garlic becomes fragrant. Then add the asparagus and fry for another two minutes.

Pour in the cream and add half of the Parmesan. Cook for 4 minutes. Season with salt and pepper.

Meanwhile, cook the gnocchi in a large pot of salted boiling water. Once cooked, transfer the gnocchi to the sauce, add the zest of half a lemon and squeeze in about one tablespoon of lemon juice, and gently mix. If the sauce is too thick, add a bit of the water in which the gnocchi were cooked.

Serve the prepared gnocchi on plates, garnished with the remaining Parmesan and grated lemon zest.
