Cottage Cheese Noodles
Among the well-known Prekmurje dishes, alongside bograč, bujta repa, and gibanica, are also skutni or cottage cheese noodles. The basic ingredients of this quickly prepared dish are cottage cheese (locally known as kisilak) and sour cream, which Prekmurje people generally use extensively in cooking. The prepared noodles are usually served as a standalone dish with a bowl of salad, while in Hungary, sweet cottage cheese noodles are also known and enjoyed as a dessert after lunch.

Ingredients
Homemade noodles

0.5 kg Wheat flour, white, multi-purpose

2 piece Egg, fresh

pieces Milk, whole milk

pieces Water

pieces Salt, table
Soup

2 spoons Oil, vegetable oil, canola

2 dl Sour cream

250 g Cheese, cottage cheese

pieces Meat, pork, smoked bacon

From flour, egg, salt, a little milk (and if needed, a bit of lukewarm water), knead a fairly firm dough. Roll it out as thinly as possible (about 2 mm) on a lightly floured board. Let it rest for a while to dry slightly, then dust it with sharp flour, roll it up, and cut into 1 cm wide noodles.

Cook the prepared noodles in salted boiling water and drain them.

In a pot, heat a mixture of oil and cream. Remove from heat, mix in the cottage cheese, and pour the prepared sauce over the cooked noodles. Stir well and, if desired, garnish with warmed breadcrumbs. Serve the prepared dish.
