Cottage Cheese Pastry with Peaches

Steps

In a bowl, sift the flour and powdered sugar. Add lemon zest and salt, and mix well. Add the cold butter cut into cubes and use your fingertips to rub the fat into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg yolk and cold water, and quickly knead the ingredients into a uniform dough. Shape it into a ball, wrap it in plastic wrap, and refrigerate for one hour.

Mix the cottage cheese with yogurt, eggs, regular and vanilla sugar, lemon zest, and starch. Gently and slowly fold in the beaten egg whites.

Wash, peel, and slice the peaches, then drizzle them with lemon juice to prevent them from darkening.

Preheat the oven to 200°C. Line a medium-sized baking dish with parchment paper. Roll out the chilled dough thinly on a lightly floured surface and carefully transfer it to the baking dish. Gently press it into the base and shape a nice edge. Spread the cottage cheese cream over it, then arrange the peach slices on top. Bake the pastry in the preheated oven for 20 minutes, then reduce the temperature to 150°C and bake for another 20 minutes.

Let the baked pastry cool completely. Once cooled, cut it into pieces, serve on a plate or platter, and enjoy.
