Ingredients

Steps

Sift the flour into a bowl and add a pinch of salt around the edges. Make a well in the center. In a separate bowl, mix the yeast, 3 tablespoons of warm milk, and one teaspoon of sugar. Mix until the yeast dissolves.

Pour the mixture from the bowl into the well and cover with a little unsalted flour. Cover the mixture with a kitchen towel and let it rise for about 20 minutes. When cracks appear on the yeast mixture, add the cubed butter, egg, and the remaining sugar. Also add one tablespoon of milk.

Knead the dough well with an electric mixer fitted with dough hooks. When the dough separates from the bowl, stop kneading, cover the dough again, and let it rise for about 2 hours in a warm place.

Prepare a cake pan by lightly greasing and flouring it. Roll out the risen dough on a floured work surface, then place it on the bottom and sides of the pan. Let it rise in the pan for an additional 20 minutes.

Meanwhile, thoroughly wash and dry the lemon. Grate half of the lemon zest. Beat the egg and separate the yolk from the white. Thoroughly drain the cottage cheese and preheat the oven to 190 degrees Celsius. Prepare a separate bowl and add both types of cream, cottage cheese, breadcrumbs, sugar, egg yolk, and grated lemon zest.

Mix all the ingredients in the bowl with the beaters of an electric mixer. Then, in a separate bowl, beat the egg white and gently fold it into the other ingredients. Pour the cottage cheese filling into the pan and place it in the preheated oven.

Bake the pie for about 40 minutes until it turns golden brown. Then turn off the oven and leave the pie in the oven for at least another 15 minutes. Carefully release the pie from the pan and let it cool on a wire rack. Cut the baked pie into slices, arrange them on a serving platter, and serve.

Advice
It is best to use an organic lemon, the peel of which has not been treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
