Cottage Cheese Pie Grandmas Style

Steps

Sift the flour and baking powder into a bowl. Mix the sifted ingredients. Add the butter pieces to the flour and rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add salt, sugar, lemon zest, egg yolks, and sour cream, and quickly knead into a dough.

Shape the kneaded dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Grease a rectangular baking dish (20 x 30 cm) with butter and dust it with flour (or line it with parchment paper). Take the chilled dough out of the refrigerator and divide it into two equal parts. Take one piece of dough and roll it out on a floured surface to the size of the baking dish. Carefully place the dough into the dish, shaping it to cover the bottom completely. Prick it with a fork in several places.

In a bowl, add egg whites, a tablespoon of lemon juice, and 150 g of sugar. Beat until stiff peaks form.

In another bowl, mix the cottage cheese with vanilla sugar and flour (or breadcrumbs). Gently and slowly fold the beaten egg whites into the mixture in two or three additions.

Spread the cottage cheese filling evenly over the dough in the baking dish. Take the second piece of dough, roll it out to the size of the baking dish, and use it to completely cover the cottage cheese filling. Prick the top dough with a fork in several places. Place the baking dish in the oven preheated to 180°C for 30 minutes, until the dough turns golden brown.

Let the baked pastry cool completely before serving. Dust the cooled pastry with powdered sugar, cut into pieces, and serve.
