Ingredients
Dough
-
450 g Wheat flour, white, multi-purpose
-
1 pinch Salt, table
-
225 g Butter, unsalted
-
3 pieces Egg, egg yolk, fresh
-
1 bag Baking powder
-
75 g Powdered sugar
Filling
-
500 g Cheese, cottage cheese
-
250 g Cheese, cottage cheese
-
180 g Sour cream
-
1 bag Sugar, white
-
1 teaspoon Lemon zest, fresh
-
50 g Powdered sugar
-
25 g Powdered sugar
-
75 g Sugar, white
-
250 g Blueberry, raw
-
125 g Blackberries, fresh
Steps
-
First, prepare the crumbly dough. In a bowl, mix the flour, cold butter cut into pieces, and salt. Mix until you get a mixture that resembles coarse crumbs. Add powdered sugar, baking powder, and three egg yolks. Quickly knead the dough, then shape it into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
-
Prepare the filling. In the first bowl, mix both types of cottage cheese. Add vanilla sugar and grated lemon zest. In the second bowl, beat three egg whites into stiff peaks and gently fold in powdered sugar (regular and vanilla), granulated sugar, and sour cream. Slowly mix the contents of the second bowl into the cottage cheese mixture.
-
Preheat the oven to 180°C. Take the dough out of the refrigerator and roll it out to about half a centimeter (or up to one centimeter) thick. Place it in a round pie or cake baking dish. Shape the edges nicely.
-
Place the baking dish with the dough in the preheated oven for 5-7 minutes. If desired, cover it with baking paper. Then remove the dish from the oven and spread the cottage cheese filling over the dough, scattering blueberries and blackberries on top. Bake the pie in the preheated oven for another 45 minutes.
-
Once the pie is baked, remove it from the oven and let it cool in the baking dish. Once cooled, cut it into slices, serve on plates, and offer with a beverage of your choice.
