Cottage Cheese Pie with Raisins

Steps

Sort the raisins, rinse them under running water, and place them in a bowl where you pour rum (or orange juice) over them. Let them soak while you prepare the other ingredients.

Sift the flour, baking powder, and powdered sugar into a bowl. Add the egg yolk, lemon zest, sour cream, and butter cut into pieces. Knead everything into a smooth dough, wrap it in foil, and store it in the refrigerator for at least 30 minutes to cool well.

Place the cottage cheese in a clean bowl and mix it with egg yolks, sugar, pudding powder, lemon juice, and zest. Beat the egg whites into stiff peaks.

Finely chop the nuts. Mix half of them into the cottage cheese cream and save the other half for later. Add the soaked and drained raisins, and finally, gently and slowly fold in the beaten egg whites.

Preheat the oven to 180 degrees Celsius. Lightly grease a deep rectangular baking dish (approximately 20 x 30 cm) with butter and line it with baking paper. Divide the cooled dough into two parts.

Take one part of the dough and roll it out thinly on a lightly floured work surface. Carefully place the rolled-out dough into the baking dish. Gently press it against the base, then spread the cottage cheese cream on top. Roll out the second part of the dough thinly and place it in the baking dish, completely covering the cottage cheese filling. Prick the top dough several times with a fork, then brush it with beaten egg and sprinkle the remaining chopped nuts on top. Bake the pastry in the preheated oven for 40-50 minutes.

Let the baked pastry cool, then dust it with powdered sugar and cut it into pieces. Serve on a nice plate or platter.

Advice
