Cottage Cheese Pockets (Pillows) with Raisins

Ingredients

500 g Cheese, cottage cheese

100 g Sugar, white

1 bag Sugar, white

1 piece Egg, fresh

pieces Lemon zest, fresh

100 g Raisins

pieces Alcohol, Rum

pieces Powdered sugar
Steps

Sort and rinse the raisins. Place them in a small bowl and soak them with rum, water, or orange juice. Let them soak while you prepare the other ingredients.

Preheat the oven to 200 degrees Celsius. Line a baking tray with parchment paper.

Mix the cottage cheese with regular and vanilla sugar, egg, and grated lemon zest.

Roll out the fresh or thawed puff pastry on a lightly floured surface to a thickness of two millimeters and cut it into smaller squares, about 15 x 15 centimeters in size.

Mix the soaked raisins into the cottage cheese. Spoon the filling into small mounds in the center of each square. Form pockets or pillows by bringing the opposite corners of the square together in the center and pinching them closed (you can use egg white to help seal them).

Place the prepared pockets on the baking tray and bake in the preheated oven for 20 minutes.

Serve the pockets while they are still warm or let them cool before serving. Dust them with powdered sugar before serving.

Advice
The easiest way to thaw puff pastry is to leave it wrapped in the refrigerator overnight. If thats not possible, place it on a plate and let it thaw at room temperature for 30–60 minutes.
