Cottage Cheese Ravioli with Red Cabbage
In the first semifinal duel in history, Siniša and Simone competed for a ticket to the grand finale. The judges assigned them an extremely challenging task. They had to create a three-course menu for each judge and for a secret guest, who critically evaluated their dishes. For all twelve exquisite plates, they had only 20 euros at their disposal! Siniša earned the victory, and below you can read the recipe for his appetizer.

1 piece Shallot

100 g Cheese, cottage cheese

100 g Wheat flour, white, multi-purpose
Steps

Tortellini: Make dough from cottage cheese and flour, similar to noodle dough. Wrap it in foil and let it rest while preparing the filling.

In a small pot, melt butter and lightly fry the flour until golden. Pour in milk, season with salt and pepper, and add cumin and melted cheese. Cook everything into a thick béchamel sauce, then let it cool.

Roll out the dough thinly and cut out circles. Place a spoonful of filling in the center of half the circles and cover with the remaining circles. Seal the edges with water. Fry the ravioli until golden brown in hot oil (heated to 170°C).

Braised Red Cabbage: Sauté chopped shallots in melted butter. Add sugar and when it caramelizes, deglaze with wine. Simmer and add all other ingredients except the broth. Cook until the cabbage softens. Add broth as needed.

Serve the braised cabbage on plates first. Add the fried ravioli and serve the prepared dish.
