Cottage Cheese Roll with Raisins
Its a fact that we Slovenes are big fans of delicious rolls or strudels, as we like to call them colloquially. Of course, homemade ones are the best, so we offer you an excellent recipe for a cottage cheese roll with raisins.

Ingredients
Dough

250 g Wheat flour, white, multi-purpose

2 pinch Salt, table

3 spoons Oil, vegetable oil, canola

100 ml Water
Filling

500 g Cheese, cottage cheese

1 dl Sour cream

2 piece Egg, fresh

60 g Sugar, white

1 bag Sugar, white

pieces Lemon zest, fresh

80 g Raisins
-
pieces Alcohol, Rum
Steps

Sift the flour into a bowl and add salt. Pour in water and oil, then mix all the ingredients well with clean hands until they come together to form a rough dough. Knead the dough on a lightly floured surface until it becomes soft and elastic, and no longer sticks to your hands or the work surface. Shape the kneaded dough into a ball, brush it with oil, cover it, and let it rest for at least half an hour.

While the dough is resting, prepare the filling. Place the cottage cheese in a bowl and mash it well with a fork. Mix the mashed cottage cheese with sour cream, eggs, vanilla sugar, regular sugar, and grated lemon zest.

Preheat the oven to 180 degrees Celsius. Melt the butter in a small pot over low heat. First, roll out the dough on a lightly floured surface, then transfer it to a damp cloth and stretch it thinly on all sides. Trim the thick edges of the dough with a knife. Brush the dough with melted butter. Spread the cottage cheese filling over 2/3 of the dough and sprinkle the soaked raisins over it. Fold the shorter side of the dough inward, then roll it up using the cloth. Start rolling from the side with the filling.

Line a baking tray with parchment paper (grease it with butter) and place the prepared roll on it. Brush the top of the roll generously with butter. Bake the roll in the preheated oven for 40 to 50 minutes, or until the dough turns golden brown and crispy.

Let the baked roll rest and cool slightly. Dust it with powdered sugar, slice it diagonally, and serve.

Advice
