Cottage Cheese Slices with Apples
The pastry is really good and very juicy, so we are sure you wont stop at just one piece. Especially if you enjoy it with a cup of your favorite warm drink. In the cream, you can use strained or unstrained cottage cheese. If you want the cream to be even richer and creamier, use cream cheese or a cheese spread.

240 g Wheat flour, white, multi-purpose

In a bowl, sift the flour, powdered sugar, salt, and baking powder. Mix the sifted ingredients with vanilla sugar, then add the cubed butter. Use your fingertips to work the fat into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg and, using cold hands, knead everything together into a dough. Shape it into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

While the dough is resting, prepare the remaining ingredients. Preheat the oven to 180°C (350°F). Lightly grease the bottom of a medium-sized rectangular baking dish (approximately 25 x 35 cm) with butter and line it with parchment paper. In a bowl, mix the cottage cheese (or cream cheese), eggs, sugar, and juice of half a lemon until smooth. Wash and dry the apples with paper towels. Use a round cutter to remove the cores, then slice them into 2 cm thick rings. Immediately drizzle them with lemon juice to prevent browning.

Take the dough out of the refrigerator and roll it out on a lightly floured surface to about 1 cm thickness. Place it in the baking dish, making sure it covers the bottom completely. Spread the cottage cheese filling evenly over the dough and arrange the apple rings on top. Bake the pastry in the preheated oven for about 45 minutes. Let it cool completely before slicing into smaller pieces and serving.
