Couscous with Chicken, Leeks, and Tomatoes
A quick dish made from couscous, chicken, and vegetables is prepared effortlessly and without unnecessary complications, as you only need to quickly sauté all the ingredients in a pan and pour hot water over the couscous (for more flavor, you can also use broth). You can enjoy this dish for lunch or dinner, and if you need a side, we recommend a salad.

250 g Couscous, dry

2 spoons Oil, olive

450 g Meat, chicken, breasts

Place the couscous in a bowl and mix it with a little salt. Pour hot water over it until all the grains are covered with liquid. Cover the bowl and let the couscous absorb all the liquid and fluff up.

Meanwhile, cut the chicken into pieces, and wash and clean the leeks and tomatoes. Slice the leeks into rings, and dice the tomatoes, removing the seeds, then cut them into chunks.

Pour olive oil into a pan and wait for it to heat up. Add the chopped chicken and quickly sauté it while stirring to cook it on all sides. Add the leeks and sauté for another 4-5 minutes, then season everything to taste with salt and pepper and sauté for an additional 2 minutes while stirring.

Once the couscous has fluffed up, use a fork to break it apart into individual grains. Add it to the pan with the sautéed chicken and leeks. Mix in the chopped tomatoes and stir everything well. If desired, you can season the dish with a bit of lemon juice and olive oil.
