Couscous with Chicken Thighs and Vegetables

100 g Carrot, fresh

150 g Potatoes, white

3 twigs Spices, ginger, ground

300 g Meat, chicken, thighs

Steps

Wash and dry the chicken thighs. Thoroughly wash the zucchini and slice it into rings. Peel and finely chop the onion. Peel and wash the carrots and potatoes. Slice the carrots into rings and cut the potatoes into pieces. Thoroughly wash and dry the thyme and parsley, then pluck the thyme and parsley leaves.

Place a pot with 2 dl of water on the stove and wait for it to boil. In another pot, heat the oil and sauté the onion while stirring until it becomes translucent, then add the chicken thighs, seasoning them with salt and pepper to taste. Cook the thighs for about 5 minutes, ensuring the meat is evenly browned on all sides. Add the potatoes and carrots, then quickly mix everything together.

In a small bowl, mix the cream and flour to form a smooth mixture. Pour 1 dl of boiling water and the cream mixture over the meat and vegetables. Mix well, cover the pot, and cook over moderate heat for about 25 minutes. Check occasionally and add a little hot water if it becomes too dry.

Meanwhile, prepare the instant couscous. Place a larger pot on the stove and fill it with water as indicated on the packaging. Add a teaspoon of salt and oil, and wait for it to boil. Then add the couscous to the pot and mix well. Remove the pot from the heat and let it sit for about 5 minutes to allow the couscous to absorb the water.

Place a larger pan on the stove and quickly sauté the zucchini without fat. Mix the prepared zucchini and couscous with the stew. Add the herbs, then serve the dish on plates and offer it to your guests.
