Couscous with Mint Turkish Style

Ingredients

2 cups Couscous, dry

2 piece Small pumpkins

4 pieces Tomato, red

0.5 teaspoons Salt, table

Pour the couscous into a bowl, lightly salt it, and cover it with boiling water. There should be enough boiling water to cover all the couscous. Cover the bowl and let it sit for about 10 minutes so the couscous absorbs all the liquid.

Wash and dry the zucchini with a paper towel. Dice them. Pour a little (1.5 tablespoons) olive oil into a pan and sauté the zucchini while stirring. Salt the zucchini and add them to the bowl with the couscous.

Wash and dry the tomatoes. Dice them and add them to the bowl. Finally, wash the mint leaves and roughly chop them. Add the mint to the bowl, then mix all the ingredients well with a fork. Season with olive oil and salt, and mix well again. Let it sit for 10 minutes so the couscous absorbs the mint aroma, then serve on plates and enjoy.

Advice
