Steps

Prepare Genovese pesto from the listed ingredients. Thoroughly wash the tomatoes, remove the green parts, and cut them into eighths. Wash the basil sprig thoroughly and dry it.

Cut the lemon in half and squeeze the juice from both halves. Place a kettle with about half a liter of water on the stove and wait for it to boil. Then pour the couscous into a bowl, lightly salt it, and pour the boiling water over it. Cover the bowl and let it sit for about 10 minutes, allowing the couscous to absorb the liquid.

Mix the prepared Genovese pesto and the chopped tomatoes into the couscous. Pour the lemon juice over the couscous and mix well.

Finally, sprinkle the couscous with pine nuts and refrigerate it for at least 15 minutes to cool thoroughly. Garnish it with a sprig of basil and serve to your guests.
