Covered Apple Pie with Cardamom

Steps

Preheat the oven to 220 degrees Celsius. Grease a round pie dish (22 cm in diameter) with butter and dust with flour (remove excess flour). Wash the apples, peel them, clean them (remove stems and cores), and cut them into quarters. Slice the quarters into 1 cm thick pieces. Place the sliced apples in a large bowl and mix them with lemon juice, ground cardamom, flour, and sugar.

Take 1/3 of the total amount of dough to create two parts - a larger and a smaller one. Roll out the larger piece of dough on a lightly floured surface into a circle, 28 cm in diameter. Place the dough circle into the pie dish. Gently press it against the bottom and sides of the dish with your fingers. Roll out the smaller piece of dough on a floured surface into a slightly larger circle than the diameter of the pie dish.

Arrange the apple slices over the dough base. Brush the edges of the bottom dough with milk, then place the smaller dough circle over the apples. Press the edges of the dough tightly together. Make a small cross in the center of the pie with a knife to allow steam to escape during baking.

In a small bowl, whisk the egg yolk and brush it over the surface of the pie. Sprinkle some sugar over the dough, then place the pie dish into the preheated oven. Bake the pie for 20 minutes, then reduce the temperature to 190 degrees Celsius and bake for another 50 to 60 minutes. The pie is done when the top crust turns a beautiful golden brown.

Serve the pie warm or cold with whipped cream, a scoop of ice cream, or custard.

Advice
You can optionally add some raisins and/or rum to the pie. Cardamom can be replaced with cinnamon. The shortcrust pastry can be bought or made at home.
