Covered Cherry Pie

Ingredients
Dough

250 g Flour, Wheat, bread flour

175 g Butter, unsalted

3 spoons Powdered sugar

1 piece Egg, fresh

1 spoon Water
Filling

150 g Marmalade, orange

750 g cherries, fresh

Sort the cherries, wash them, and remove the pits. In a small pot, add marmalade and water, mix, and heat over medium heat until boiling. While stirring, cook until the water and marmalade combine, then continue cooking until the mixture thickens. Add the pitted cherries and cook for another 5 minutes. Stir constantly with a spoon. Pour the marmalade with cherries into a bowl and let it cool completely.

Sift the flour into a bowl and add the butter cut into pieces and powdered sugar. Quickly and lightly rub the butter into the flour and sugar with your fingers. In a smaller bowl, beat the egg and whisk it together with water. Pour the mixture into the bowl and knead everything into a crumbly dough. Transfer the dough to a floured work surface, divide it in half, and shape into two equal-sized balls. Roll each one out into a 0.5 cm thick dough.

Grease a pie dish (20 or 22 cm in diameter) with butter and line it with one piece of rolled-out dough. Adjust the dough to the shape of the dish with your fingers and prick it several times with a fork. Trim any excess dough hanging over the edge. Roll out the second piece of dough. Pour the marmalade with cherries onto the dough in the dish, then cover it with the top layer of dough. Trim any excess dough and press the two layers together by pinching them. Let the prepared pie rest for 30 minutes.

Preheat the oven to 200 degrees Celsius. Sprinkle the pie with a tablespoon of sugar, and lightly score a cross in the center with a knife. Bake the pie for 30 minutes, then reduce the temperature to 180 degrees Celsius and bake for another 15 minutes. When the dough turns golden brown and you hear the marmalade bubbling in the center, the pie is done.

Remove the baked pie from the oven and let it cool slightly. Then cut it into slices and serve warm with whipped cream or a scoop of ice cream.
