Covered Walnut Pie

Ingredients
Dough

220 g Wheat flour, white, multi-purpose

110 g Butter, unsalted

60 g Powdered sugar

1 teaspoon Lemon zest, fresh

2 piece Egg, egg yolk, fresh

1.5 spoons Milk, whole milk
Filling

150 g Powdered sugar

1.5 dl Water

1.5 dl Sweet cream

185 g Walnuts

1 spoon Honey

1 spoon Butter, unsalted

1 spoon Wheat flour, white, multi-purpose

1 piece Egg, egg yolk, fresh
Steps

Sift the flour and sugar into a bowl. Sprinkle the diced butter and lemon zest on top. Quickly and lightly rub the butter into the flour with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolk and pour in a little cold milk, then quickly knead all the ingredients into a smooth dough with cold hands. Shape the dough into a ball, wrap it in foil, and refrigerate for one hour.

Meanwhile, prepare the filling. Place a saucepan with sugar and water on the stove. Slowly bring it to a boil over moderate heat and cook, stirring, until a golden brown light caramel forms.

Remove the saucepan from the heat and mix in the sweet cream, honey, and chopped walnuts. Let the filling cool.

Preheat the oven to 180 degrees Celsius. Roll out two-thirds of the dough on a floured work surface into a circle, then line a greased and floured pie dish with it. Gently press the dough with your fingers against the bottom and sides of the dish. Sprinkle the cooled filling over the dough and spread it evenly. Roll out the remaining third of the dough and cover the filling with it.

Press the edges of the dough tightly together. Beat the egg yolk in a small bowl and brush it over the surface of the pie. Bake the pie in the preheated oven for about 40 minutes. Remove the baked pie from the oven and let it cool.

Slice the cooled pie into pieces, serve on plates, and offer to your guests.

Advice
Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
