Cream and Jam Roll
A popular homemade dessert that delights with its excellent taste and quick and easy preparation. You can make it with sour or sweet cream, and you can also decide which jam to use. We recommend a combination of strawberry jam and sour cream.

Steps

Separate the egg whites and yolks into two bowls. Add regular and vanilla sugar to the yolks and beat them with an electric mixer until light yellow.

Beat the egg whites into stiff peaks, adding a pinch of salt while beating. Gently and slowly fold the beaten egg whites into the yolks in two or three parts using a spatula or whisk. Sift the flour mixed with starch over the mixture and lightly mix to form a uniform batter.

Line a low baking tray (30 x 35 cm) with baking paper. Pour the batter onto the tray and spread it evenly with a spatula, smoothing the top.

Bake the sponge in a preheated oven at 200°C for 7 to 10 minutes. It is done when it slightly springs back after pressing with a finger. If baked too long, it will become dry and brittle.

Prepare a piece of baking paper and sprinkle it with powdered sugar. Remove the baked sponge from the oven and let it cool slightly. Then, invert it onto the powdered sugar-covered paper. Carefully remove the baking paper it was baked on. Roll the sponge and let it cool.

Unroll the cooled sponge. First, spread it with jam, then add the sour cream, spreading it evenly. Roll it up again, then wrap the roll in plastic wrap and refrigerate for about an hour to cool thoroughly.

Unwrap the cooled roll, slice it, and serve.
