Creamed Horseradish
When the table is richly laden with (Easter) meat delicacies, dont forget the creamed horseradish. The meat symbolizes the body of Christ, the red eggs represent drops of blood, and the horseradish stands for the nails. To make its taste less pungent, we mellow it with fresh cream.

Steps
- Peel the horseradish and finely grate it into a bowl. Add salt, sugar, lemon juice, and mix everything well. In a container with an electric mixer, whip the cream thoroughly. Slowly fold the cream into the horseradish with a whisk and season to taste. Serve the horseradish directly in the bowl.

Advice
Make the creamed horseradish just before you need it, so it stays fresh and doesnt oxidize. If you want to mellow the sharp smell of horseradish, place it in the freezer for a while.
