Creamy Cauliflower Soup
Creamy cauliflower soup is absolutely excellent. For an even greater enjoyment, serve it with toasted bread cubes, garlic croutons, or cheese sticks.

Ingredients

900 g Cauliflower, fresh

0.5 l Water

0.5 l Milk, whole milk

1.5 spoons Oil, olive

0.75 teaspoons Salt, table

2 pinch Spices, pepper, white

2 pinch Spices, nutmeg, ground

1 dl Sour cream
Steps

Clean the cauliflower, wash it, and separate it into individual florets. Place the florets in a large pot and cover them with water and milk.

Place the pot on the stove and slowly bring the contents to a boil. Once it boils, reduce the heat slightly and continue cooking until the cauliflower pieces are completely tender.

Remove the pot from the heat and blend the vegetables smoothly with an immersion blender. Add olive oil, salt, white pepper, and grated nutmeg, mix well, and return the pot to the stove. When the soup boils, remove the pot from the heat and stir in the sour cream. Taste the soup and adjust the seasoning with more salt or pepper if needed. Serve the soup in deep bowls or soup cups and serve immediately.

Advice
Instead of sour cream, you can use sweet cream or yogurt. Salt the cauliflower when it is cooked. If you add salt at the beginning of cooking, the cauliflower will darken during cooking.
