Creamy Chard and Potato Soup
It often happens that we have so much chard in the garden that we simply dont know how to use it all. A great idea is to prepare a delicious vegetable soup, where it is accompanied by potatoes, which provide a thick, creamy texture. You can spice up the soup with croutons, toasted pumpkin seeds, and/or grated cheese.

Ingredients

30 ml Oil, olive

1 piece Onion, raw

pieces Garlic, fresh

400 g Swiss chard, fresh

400 g Potatoes, white

700 ml Water

200 ml Sweet cream

pieces Salt, table

pieces Cheese, Parmesan, grated
Steps

Peel the onion and garlic, and chop them finely separately. Peel the potatoes and cut them into approximately 2 cm pieces, wash the chard and slice it into strips or chop it roughly.

Heat oil (you can also use butter) in a pot, and sauté the chopped onion. Stir it for about 4 minutes until it becomes translucent and soft.

Add the potatoes, chard, and garlic to the pot. Sauté everything while stirring until the garlic becomes fragrant, then pour in water and add a teaspoon of salt. Cover the pot and let the vegetables simmer gently for about 15 minutes.

Once the potatoes are completely soft (check with a thin knife), pour in the sweet cream and remove the pot from the heat. Blend the soup with an immersion blender.

Return the pot to the stove and thin the soup with about a deciliter of water. Simmer it on moderate heat for about 3 more minutes. Season to taste and add more salt if needed.

Once the soup is ready, serve it in deep bowls or soup cups. Serve with bread, croutons, toasted pumpkin seeds, or grated cheese.

Advice
You can also stir in a bit of lemon juice at the very end, which will pleasantly refresh the soup.
