Creamy Chicken Curry with Cashew Nuts
Chicken curry will always impress you with its rich flavor, while the addition of chili will pleasantly warm you up. Serve it with boiled rice or simple flatbreads, and you can add other vegetables (broccoli, spinach, zucchini, etc.) to the sauce along with the bell pepper.

Peel the onion and garlic, then finely chop them separately. Wash and clean the bell pepper. Cut it into thin strips or pieces. Peel the ginger and grate it finely. Cut the chicken into bite-sized pieces.

Place a wok or deep pan on the stove and heat about two tablespoons of oil. Add the onion and sauté it over medium heat for 3-5 minutes, stirring until it becomes translucent. Add the grated ginger and chopped garlic, stirring until fragrant, then reduce the heat and add the red curry paste. Stir the ingredients continuously for 2-3 minutes to allow the spices to release their aroma.

Increase the heat to medium. Pour the remaining tablespoon of oil into the pan and add the chicken pieces. Sauté for 2-4 minutes until the pieces are lightly browned, then add the sliced bell pepper. Continue to sauté everything for another 4-5 minutes, seasoning with salt and ground pepper.

Pour the coconut milk and lime juice into the pan. Add sugar and mix the sauce well. Simmer the curry gently for 15-20 minutes. It is ready when the sauce thickens slightly and the chicken pieces are fully cooked. Finally, stir in the roasted cashew nuts and adjust the seasoning with salt or additional spices if needed.

Serve the prepared curry in deep bowls or plates. Accompany it with boiled rice or flatbreads.
