Ingredients

250 g Powdered sugar

400 ml Sweet cream

320 g Coconut, flakes

1 teaspoon Vanilla, extract, natural

Line two small baking trays with parchment paper.

Sift powdered sugar into a bowl. Make a well in the center and pour in the sweet cream. Add vanilla extract. Using a hand mixer, first mix in half of the coconut flour, then add the remaining half. The mixture should be thick and the ingredients evenly combined.

Divide the mixture into two parts and color one part pink. Knead both mixtures well with your hands.

Place the mixtures into the baking trays (white in one and pink in the other), smooth them out, and press down firmly. Place the trays in the refrigerator for 2 hours to allow the mixture to set.

Carefully remove the cooled and set mixture from the trays, remove the parchment paper, and cut into squares. Arrange on a serving plate and serve.

Advice
The density of the mixture depends on the thickness of the cream. If the mixture is too thin, add a bit more coconut. Instead of cream, you can use condensed milk. In an airtight container and in a cool place, the coconut squares can last up to 3 weeks.
