Creamy Kohlrabi Soup with Fried Kohlrabi and Almonds
The author of the recipe, Špela Klopčič, was the first contestant eliminated in the third season of the show Gostilna išče šefa. She shared with us this recipe for a healthy yet very tasty kohlrabi soup.

Ingredients

5 dag Butter, unsalted

1 kg Kohlrabi, raw

40 dag Green, tuber

40 dag Potatoes, white

2 dl Alcohol, Wine, White

pieces Salt, table

1.5 l Soup base, chicken, cube

pieces Nuts, almonds
Steps

Clean, wash, and cut the kohlrabi, leek, and potato into small cubes.

Sauté the chopped vegetables in butter. Add wine and simmer until the wine evaporates.

Add spices, herbs, and finely chopped almonds. Pour in the vegetable stock and let the soup simmer on moderate heat.

While the soup is cooking, slice the kohlrabi thinly (julienne) and fry it in hot oil. Dry roast the almond slices.

Once the vegetables are tender (after 20 minutes of cooking), remove the pot from the heat and take out the bay leaf. Blend the soup smoothly with an immersion blender. Heat the blended soup slightly.

Serve the soup in bowls, garnish with fried kohlrabi and roasted almonds, and enjoy.
