Creamy Lentil Soup
A mildly spicy creamy lentil soup that will fill us up and warm us pleasantly. The addition of smoked bacon gives the dish a strong and full flavor.

Ingredients

150 g Lentils, raw

1 piece Onion, raw

60 g Meat, pork, smoked bacon

1.5 spoons Oil, vegetable oil, canola

8 dl Soup base, chicken, cube

3 pinch Salt, table

2 pinch Spices, pepper, black

0.75 teaspoons Mustard

4 teaspoon Sour cream
Steps

Rinse the lentils under running water and drain well. Peel the onion and chop it finely. Cut the smoked bacon into smaller pieces.

Place a larger pot on the stove and heat the oil. Sauté the chopped onion in the hot oil until it becomes translucent. Add the bacon pieces and quickly fry them while stirring. Add the lentils, mix all the ingredients well, and pour in the broth. Wait for the broth to boil, then reduce the heat and simmer the soup on low heat for about 40 minutes.

Set aside one-third of the cooked lentils, then blend the remaining lentils along with the liquid in a mixer until coarse. Pour the blended soup back into the pot, add the reserved lentils, and place the pot back on the stove.

Bring the soup to a boil again and season to taste with salt, pepper, and mustard.

Serve the prepared soup in soup bowls, garnish with a dollop of sour cream, and enjoy.
