2 piece Gelatin powder, unsweetened

50 g Nuts, almonds, roasted, unsalted

In a small pot, heat 400 ml of sweet cream and sugar. Cook over low heat, allowing it to simmer slowly until the cream thickens. Then add two sheets of gelatin soaked in cold water, allowing it to dissolve.

Whip the remaining cream until stiff peaks form and gently fold it into the mixture once it has cooled slightly. Mix well, add ground cinnamon if desired, and pour the mixture into your preferred molds. Sprinkle toasted almond flakes on top. Place the panna cotta in the refrigerator to cool and set.

If using fresh forest fruits, lightly sprinkle them with sugar and lemon juice, then arrange them alongside the panna cotta, garnishing with a fresh sprig of mint. If using frozen forest fruits, lightly cook them with sugar and serve warm with the panna cotta.
