Creamy Potato Soup with Sour Cream

Ingredients

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

500 g Potatoes, white

1 piece Spices, bay (leaves)

2 pod Garlic, fresh

9 dl Soup base, beef, cube

0.25 teaspoons Salt, table

2 pinch Spices, pepper, black

4 spoon Sour cream
Steps

Peel and finely chop the onion. Peel and roughly chop the garlic. Peel the potatoes, wash them, and cut them into smaller pieces.

Heat the oil in a pot and sauté the onion while stirring. Add the potatoes and fry everything together for 2 minutes. Then add the garlic and bay leaf. Pour the vegetable broth over the vegetables. Let the liquid come to a boil, then reduce the heat and simmer on medium heat until the potatoes are completely soft (15 to 20 minutes). Season with pepper and salt to taste.

Remove the pot from the heat, pour out a little liquid, and mash the potatoes. Mix the mashed potatoes with sour cream. Thin the soup with the reserved liquid, serve in bowls, and enjoy.
