Creamy Spinach Soup
Creamy spinach soup is very tasty and exceptionally healthy. Since we prepare it by adding a bit of fresh spinach at the end, it also has a very intense green color. This is a soup that awakens and revitalizes a sleepy and tired body!

Ingredients

2.5 spoons Oil, olive

1 piece Onion, raw

1 piece Potatoes, white

2 pod Garlic, fresh

600 ml Soup base, chicken, cube

450 ml Milk, whole milk

500 g Spinach, raw

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

1 pinch Spices, mace, ground

4 spoon Sour cream
Steps

Clean the spinach, wash it, and dry it. Chop it roughly. Peel the potatoes, wash them, and cut them into small pieces. Peel the onion and garlic, and finely chop them separately.

Heat olive oil in a pot and sauté the onion. Add the potato pieces and chopped garlic, and fry the ingredients in the pot while stirring constantly for 1 minute. Pour in the broth and cook over moderate heat for 6 to 8 minutes. Then add the milk, increase the heat, and bring to a boil. Add half of the spinach, reduce the heat, cover the pot, and cook for another 10 minutes until all the spinach wilts and the potato pieces are completely softened.

Remove the pot from the heat and carefully pour the contents into a kitchen blender. Add the remaining spinach and blend the soup until smooth. If you have a small kitchen blender, blend the soup in two or three batches.

Pour the blended soup back into the pot and slowly heat it over moderate heat. Season to taste with pepper, salt, and optionally with ground nutmeg. If the soup is too thick, thin it with a bit of liquid (water or broth).

Pour the prepared soup into soup bowls or deep plates, garnish with sour cream, and serve.
