Creamy Vanilla Ice Cream with Honey

The ice cream is frozen in an ice cube tray, and before serving, it is thoroughly mixed to become light and wonderfully creamy.

6 pieces Egg, egg yolk, fresh

100 g Sugar, white

80 ml Honey

pieces Vanilla, extract, natural

700 ml Sweet cream

90 g Cheese, creamy

80 ml Milk, whole milk

In a large bowl, mix together the egg yolks, sugar, honey, vanilla seeds, and salt. Pour the cream into a saucepan and slowly bring it to a gentle boil over moderate heat.

Add a ladle of hot cream to the egg yolk mixture. Once you have a completely smooth mixture, slowly pour it in a thin stream into the hot cream while continuously stirring. Return the saucepan to the stove and heat the mixture while constantly stirring with a wooden spoon until it thickens - if you run your finger over the spoon, it should leave a visible trace.

Pour the egg yolk cream through a sieve into a bowl and mix with cream cheese. Place the bowl with the cream into a larger bowl that is half-filled with ice cubes and cold water. Thoroughly mix the cream with an electric mixer. Mix for about 5 minutes or until it thickens and cools.

Prepare three ice cube trays and fill the cavities to the top with the prepared cream. Store the trays in the freezer for at least 3 hours (preferably overnight).

When you want to serve the ice cream, place the frozen cubes into an electric mixer (blender). Add milk and blend until you get a completely smooth and creamy ice cream. Serve the prepared ice cream immediately.
