Creamy Vegetable Soup with Tortellini
A rich creamy soup with vegetables and tortellini is suitable for lunch or dinner. For a completely meat-free meal, use vegetable broth, and if you want to enhance the soup, you can add diced or shredded leftovers of roasted or boiled chicken.

1 l Soup base, chicken, cube

1 teaspoon Spices, thyme, dried

30 g Wheat flour, white, multi-purpose

250 ml Milk, whole milk

250 ml Sweet cream

340 g Pasta, Macaroni

100 g Spinach, raw
Steps

Clean and wash the vegetables. Finely chop the onion and garlic separately, and cut the carrots and celery into pieces.

Place a large pot on the stove and heat the oil over medium heat. Sauté the onion until it softens. Add the carrots and celery, and continue to sauté the vegetables for about 5 minutes, stirring occasionally.

Add the butter and garlic to the pot. Mix well and wait until the butter is completely melted, then sprinkle the flour over the vegetables. Stir and cook for another minute, then slowly pour in the broth. Make sure to stir well while adding the liquid to avoid lumps. Season with thyme, Italian herbs, salt, and pepper. Cook the soup for about 15 minutes, stirring occasionally, until the vegetables are tender.

Meanwhile, in another pot, bring salted water to a boil and cook the tortellini. Follow the manufacturer's instructions, but cook the tortellini for 1 minute less than indicated on the package. Drain the cooked tortellini.

Add the milk and sweet cream to the soup pot. Mix well, then add the cooked tortellini and spinach. Cook until the spinach wilts and softens, then serve the prepared soup in deep bowls or soup cups. You can grate some Parmesan cheese on top.
