Creme brulee
Egg custard baked in a water bath with a caramelized crust. This is creme brulee (orig. crème brûlée), a sinfully delicious French dessert, for which we only need five ingredients: egg yolks, heavy cream, milk, vanilla bean, and sugar.

375 g Sweet cream

125 g Milk, whole milk

80 g Sugar, white

1 piece Vanilla, extract, natural

8 pieces Egg, egg yolk, fresh

Steps

In a bowl, mix sugar and egg yolks. Heat the milk, heavy cream, and vanilla bean, but do not let the mixture boil.

Slowly pour the hot liquid in a thin stream into the egg yolks while continuously stirring to prevent the yolks from curdling. Remove any foam that has formed on the surface and fill ceramic dishes 3/4 full with the prepared mixture.

Place a deep baking dish in the oven and arrange the ceramic dishes inside. Pour boiling water into the baking dish, ensuring it reaches just below the rim of the ceramic cups. Bake the custard for 30 minutes at 115 degrees Celsius.

Transfer the baked custard dishes to a rapid cooler and let them cool completely.

Sprinkle powdered sugar over the cooled custard using a sieve. Clean the edges, then caramelize the sugar with a torch. Serve the prepared dessert immediately.
