Crispy Cheese Pie
To prepare this delicious and juicy pie with a crispy crust, you wont need much time, as baking takes a maximum of half an hour. Cut into smaller pieces, it is a great snack to serve at a party or picnic, and the pie can also be a tasty standalone vegetarian meal that we enjoy with a bowl of salad. Roasted peppers in a salad are also an excellent side dish.

First, prepare the mixture with which we will brush the layers of phyllo dough. Crack the eggs into a bowl and whisk them well with a hand whisk. Add yogurt, breadcrumbs, and baking powder, and mix everything well to get a uniform mixture, into which we thoroughly mix the oil with a whisk or hand mixer. Lightly salt and pepper to taste.

In another bowl, prepare the filling. Crack the eggs and whisk them well with a hand whisk. Add the cheese, which we have crumbled with our fingers or cut into small cubes. Mix well. If the cheese is not too salty, lightly salt the filling and pepper to taste.

Take a sheet of phyllo dough and brush it with the mixture of eggs, yogurt, and breadcrumbs. Place another sheet of phyllo dough on top and also brush it with the mixture.

Add a third sheet of dough and spread the filling over it. We need about 3 - 4 tablespoons of filling, which we spread over the entire surface.

Fold the edges on the shorter side inward, then roll the sheets along the longer side into a longer roll, which we transfer to a baking dish lined with baking paper.

Repeat the process until we run out of dough or filling. Brush the rolls in the baking dish with the remaining mixture of eggs, yogurt, and breadcrumbs. Sprinkle seeds on top.

Bake the pie in the oven, preheated to 200 degrees Celsius, for 20 to 30 minutes. It is baked when it gets a nice golden brown color on top. Serve warm or cold.
