Crispy Chicken Bites with Pesto
If your kids love fried chicken medallions, they will surely enjoy these crispy chicken bites as well. These are much healthier since they are not fried but baked in the oven. Plus, you can make them yourself! Crispy chicken bites are an excellent idea for a snack to serve at birthday parties, movie nights, garden parties, etc.

Ingredients

4 pieces Meat, chicken, breasts

6 spoon Tomato, concentrate

3 handfuls Breadcrumbs, dried

Preheat the oven to 220 degrees Celsius. Wash the chicken fillets, dry them with paper towels, cut them into smaller pieces (about 2 cm in size), and place them in a large bowl. Add the pesto and mix the meat well with clean hands so that all pieces are evenly seasoned.

Place the breadcrumbs in a large resealable bag, add a few seasoned chicken pieces, close the bag, and shake well so that the breadcrumbs evenly coat all the pieces of meat. Remove the pieces from the bag and place them on a baking tray lined with baking paper. Repeat the process with the remaining chicken pieces.

Drizzle the chicken pieces with oil. Bake in the preheated oven for 10 to 15 minutes or until they are golden brown and crispy. Flip them halfway through baking if desired. Serve with a salad or any dip of your choice.
