Pour cornmeal onto a large flat plate. Rinse the fish fillets under running water and thoroughly dry them with paper towels. Using a sharp knife, make 4 diagonal cuts on each side of the fillets to prevent them from curling during cooking. Lightly salt both sides of the fillets, then coat them well with the cornmeal.

Place a larger pan on the stove and heat it well, then add oil and heat it further. Place the prepared fillets into the hot oil and cook each side for about 3-4 minutes or until the meat easily separates with a fork inserted into the fillet.

Once the fillets are cooked, transfer them to a paper towel to absorb excess oil. Serve the fillets on plates along with your chosen side dish.

Alongside the fish, you can serve a special sauce made from mayonnaise, chili sauce, and parsley. Wash four sprigs of parsley, shake them well, and finely chop them. In a separate bowl, mix approximately 160 g of mayonnaise, one tablespoon of chili sauce, and the chopped parsley.
