Crispy Lemon Pastry with Strawberries
On baking paper, we bake thin cookies from dough with lemon juice and sesame seeds, still warm, we top them with ginger-flavored quark and chocolate-dipped strawberries, and serve immediately.

1 piece Lemon, fresh, without shell

70 g chocolate, dark

50 g Butter, unsalted

30 ml Milk, whole milk

250 g Cheese, cottage cheese

20 g Ginger, fresh

2 cl Alcohol, Rum
Steps

Slowly and thoroughly mix the eggs with sugar, but do not beat them. Gradually, spoon by spoon, add the flour, salt, and softened butter. Mix until you get a uniform dough. Wash the lemon, grate the zest, cut it in half, and squeeze the juice. Add half a teaspoon of lemon zest, a teaspoon of lemon juice, and sesame seeds to the dough. Mix everything well and let it rest for 20 minutes. Preheat the oven to 200°C.

Line a baking tray with baking paper and spoon very thin round cookies onto it. Place the tray in the preheated oven and bake the cookies for eight minutes.

Clean the strawberries, wash them, and drain them. Cut them in half lengthwise. In a small pot, melt the butter, add milk, chocolate, and sugar, and whisk well to get a liquid glaze. Remove the pot from the heat. Dip the strawberries halfway into the glaze, then place them on a rack and wait for the chocolate to harden.

In a bowl, smoothly mix the quark, add grated ginger and brandy, and mix everything well. Arrange the baked cookies on plates, top them with ginger-flavored quark, and garnish with chocolate-dipped strawberries.

Advice
The dessert is best served fresh when the pastry is still slightly warm and the quark is cold. It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax containing toxins.
