Crispy Peanut Butter Cookies

100 g Butter, unsalted

50 g Powdered sugar

1 piece Egg, fresh

50 g Peanut butter, smooth

6 g Baking powder

250 g Wheat flour, white, multi-purpose

Preheat the oven to 200 degrees Celsius. Line a baking sheet with parchment paper.

Cream the butter and sugar together using an electric mixer set to high speed. Add the egg to the butter mixture, followed by the peanut butter.

Sift the flour and baking powder into the mixture. Mix everything well with the mixer set to low speed. Once you have a uniform mixture, stop mixing, shape the dough into a ball, wrap it in plastic wrap, and refrigerate for half an hour.

Roll out the chilled dough on a floured surface to about 5 mm thickness. Use various molds and cookie cutters to cut out the cookies and place them on the baking sheet. Leave a few centimeters of space between the cookies as they will expand slightly during baking.

Bake the cookies in the preheated oven for about 7 minutes (just until they lightly brown). Once cooled, serve them with a glass of cold milk (or a cup of coffee or tea).
