Crispy Potatoes and Meatballs from the Oven

Wash the potatoes well and cook them in their skins for 15-20 minutes in salted water. Be careful not to overcook them. They are ready when you can easily pierce them with a fork.

Meanwhile, prepare the meatballs. Peel the onion and garlic, and chop them finely. Heat oil in a pan and first sauté the onion. When it becomes translucent and softens slightly, add the garlic and cook just until it becomes fragrant. Remove from heat and let it cool.

In a large bowl, combine the ground meat with the egg, breadcrumbs, chopped parsley, onion, and garlic. Season with salt and ground pepper. Mix the ingredients well, optionally knead briefly with clean hands, then shape the mixture into small meatballs.

Preheat the oven to 220 degrees Celsius. Drain the potatoes and arrange them in a baking dish that has been greased with oil. Press each potato with a masher or glass, making sure they remain intact. The thinner the potatoes, the crispier they will be. Drizzle them with olive oil and season with salt and pepper.

Arrange the meatballs in the baking dish, then add a few sprigs of thyme. Drizzle everything with a bit more oil. Place the dish in the preheated oven for about 30 minutes.

The dish is ready when the potatoes look crispy and the meatballs are nicely baked. Serve with a bowl of salad on the side.
